Garlic Herbs Bread





This bread give a delicious aroma and I just love the taste.. Can be used for pizza dough or serve with Lasagna or any way you like.. Honestly I dont know the original recipe but I just try it at home.. so this is the best result I got so far.. :)


Ingredients:

300 gram white bread mix
300 gram self raising flour
herbs (origano, parsley, basil)
Butter
Crushed garlic
salt
warm water
2 spoon Olive oil

Preparations:
1 Place bread mix, self raising flour, olive oil and a pinch of salt in the large bowl, add 400ml water( need more or less).
2 Mix for about 5 minutes. Lets dough rest for about 5 minutes and then knead for another 10 minutes on a lightly floured board..
3 Cover with a damp cloth or clingfilm for a few hour -leave to rise in a warm place..
4 When about double size, knead again about 2 minutes and place on a greased baking tray or bread tin..
5 Pinch the dough with fingers or use fork, put the butter, crushed garlic, olive oil (again!), and herbs and pinch again until the butter and garlic about combined with the dough..


6 Bake in a pre heated 170 degree C oven for about 40-50 minutes.
7 Take it out and leave cool down for about 10 minutes and serve warm.. mm tasty!

Sweet potato balls





Ingredients:

2 large Sweet potatoes(boiled)
600 grams self raising flour ( you might need more)
1 tbsb salt
2 eggs
Icing sugar


Directions:
Mash the potatoes in a large bowl, put salt, eggs, and flour and mix together until make a nice soft dough ( dough not sticking in your hand),if the dough are still sticky put more flour.. rolled the dough into a small balls and then deep fry them until nice and golden colour.. When it cold down a bit coated with the icing sugar.. Ready to eat..


TIPS: You can coat the balls with sesame seeds before fry them.. Also can use a normal potatoes insteed sweet potatoes.. :)

Veggie Curry Puff






All time favourite dish from Malaysia... and for the first time I bring it to share with my friends when we having picnic.. I made vegetarian style as my friends are mostly vegetarians.. Original recipe is made from minced beef or chicken with small diced potatoes. Honest, believe it or not when in Malaysia nobody bother to make their own curry puff at home because easly can find it in supermarkets (frozen)or at street foods stall. The only problem is takes a little patience with the dough. I'd usually made about enough to eat at the time, but last time(yesterday) I make a giant one as I'm a bit tired with the rolling pin.. :P.. Ok so here the recipe, I make 2 different style, deep fry and baked.


Make the filling first:

4medium sizes potatoes, small diced
1 medium size carrot (diced)
1cup green peas
3spoonful Curry powder
2spoonful vegetable oil
1 small size onions (diced)
water half cup
salt

Heat the oil in a pan, fry the onions till fragrant. Add the curry powder and stir well. Put the potatoes, stir and put water, cook until the potatoes just about to soft and add the carrot, peas and salt. Cook for about 5mins till it dry and cooked. Leave aside to cool.

Pastry:

500gram flour,
2spoonful butter( margerin)
2spoonful vegetable oil
warm salted water

Heat the butter and oil just about the butter melted and then mix with the flour until combined together. Then pour the warm salted water (bit by bit) at the same time knead until you got a nice soft dough..Divide into small ball (a portions about 150grams each).



To fill and shape puff:

Roll the small ball (dough) into a circle with a rolling pin.
Put 1tbsb of filling in the centre.
Press the edge together and seal it. This will give you a half moon shape. I have a special cutter for this, so I can get the even shape.
Pinch the edge of the puff with your thump. Bring it the back side foward and seal it the front. Repeat the process until all done.

Style 1- deep fry

Heat the oil in the wok or deep fryer. Oil must be very hot before putting in the puff. Oil must enough cover the puff.
Fry it on medium heat until golden brown.





Style 2 - baked

Place the baking paper on the baking tray
Easyly put the ready puff and brush it with the egg yolk
Bake until it golden brown..

Ready to eat.. enjoy!



herbs roasted potatoes





Ingredients:

10 medium sizes King Edward potatoes
3 spoonfull vegetable fat
herbs( thyme, parsley, rosemary, origano)
3 garlic gloves
salt


Preparation method

1 Peel and cut the potatoes into half or any size as you wish, boil into salted water almost tender..
2 Drained the water and put the vegetable fat, garlic (crushed) and herbs. Put the lid on and shake the pot until all combined ( well coated with fat and herbs)..
3 Put on the baking tray and pop in the oven until it golden brown, turn it and continue until all brown..
4 Served.
