Kimchi




Sebelum ni selalu beli je kat Korean Market tapi sekarang bila dah Minji ajar hari tu terus buat sendiri je, malah suami pon dah boleh buat sendiri senang je pon... :)

1 whole cabbage,
1 Radish,
Half onion,
3bunch garlic,
3/4cup coarse chilli powder,
2tbsp Shrimp paste,
4tbsp anchovy fish sauce,
5 spring onion.
Coarse salt.


Cut the cabbage and remove the brown leaves. Put the salt in the cabbage leaf by leaf and soaked with a bit of water for about 2 hours. After 2 hours, wash the cabbage thoroughly and gently. Drain the cabbage for about one hour... In the mean time, prepare the marinate sauce..

Blend the garlic and onion with the anchovy fish sauce until smooth.. Cut the radish and spring onion into strips, set aside.

In large bowl, mix well the onion, garlic, radish, spring onion, coarse chilli powder, and shrimp paste. Combine the mixture very well. If mixing with hands, make sure wear a rubber gloves to avoid the chilli burn.

Take the cabbage and stuff the mixture between the leaves. Do not overstuff, but make sure the marinate mixture equally fill the leaves. Continue untill all cabbage stuffed. When finish, keep in the jar or container.. Keep in the normal temperature for overnight and keep in the fridge for the next 2 weeks.. Ready to eat.. For my husband its a long wait, but worth! :)
