Ikan Cencaru Sumbat...

Saya selalu buat ade dua jenis, inti kelapa dan inti cili sahaja..

Bahan2 hampir sama cuma tambah kelapa parut (desicated coconut) kalo nak buat inti kelapa

Bahan2 untuk 2 ekor ikan(saiz besar)..

Ikan disiang dan dibelah belakang, bersihkan dan remdam dalam air asam jawa untuk menghilangkan bau hanyir..

1biji bawang besar (atau 5biji bawang merah)
4 ulas bawang putih
4biji cili merah
4biji cili api
2 batang serai
sedikit kunyit
2daun limau purut
sedikit belacan..
sedikit serbuk cili atau cili boh/cili kering

Kesemua bahan2 dikisar.. Masukkan garam, kelapa parut ( kalo rasa nak yang ade kelapa).. masukkan dalam ikan dan perapkan seketika.. Selepas agak2 dah meresap sikit dalam ikan bolehla digoreng dengan sedikit minyak atau di masukkan ke dalam oven.. sampai masak.. Boleh la hidang dan dimakan bersama nasi panas..

Kimchi




Sebelum ni selalu beli je kat Korean Market tapi sekarang bila dah Minji ajar hari tu terus buat sendiri je, malah suami pon dah boleh buat sendiri senang je pon... :)

1 whole cabbage,
1 Radish,
Half onion,
3bunch garlic,
3/4cup coarse chilli powder,
2tbsp Shrimp paste,
4tbsp anchovy fish sauce,
5 spring onion.
Coarse salt.


Cut the cabbage and remove the brown leaves. Put the salt in the cabbage leaf by leaf and soaked with a bit of water for about 2 hours. After 2 hours, wash the cabbage thoroughly and gently. Drain the cabbage for about one hour... In the mean time, prepare the marinate sauce..

Blend the garlic and onion with the anchovy fish sauce until smooth.. Cut the radish and spring onion into strips, set aside.

In large bowl, mix well the onion, garlic, radish, spring onion, coarse chilli powder, and shrimp paste. Combine the mixture very well. If mixing with hands, make sure wear a rubber gloves to avoid the chilli burn.

Take the cabbage and stuff the mixture between the leaves. Do not overstuff, but make sure the marinate mixture equally fill the leaves. Continue untill all cabbage stuffed. When finish, keep in the jar or container.. Keep in the normal temperature for overnight and keep in the fridge for the next 2 weeks.. Ready to eat.. For my husband its a long wait, but worth! :)



Stew Daging..


Ni masa tengah berasap... :)

Hari ni sebenarnya xde idea nak masak ape, dari nak buat Shepherd Pie jadila stew..hehe. Bukan ape sebenarnya dalam lepas hari tak sihat hari tu otak jadi slow je rasa, kalo dulu malam tu dah ade idea nak masak ape untuk sarapan, lunch, minum petang dinner dsb tapi 2 3 hari ni payah je nak buat keputusan slow dan xde selera.. mmm harap2nya saya cepat pulih kembali aktif macam biasa, mujur ade suami penyayang nak tolong masak potong bawang dsb sampaikan Kimchi pon nak buat sendiri( ni ketagih buat dan makan kimchi sebenarnya, sampai berbalang2 buat, sabar je la)..kkkk dah story mory, ni resepi.. mudah dan simple untuk orang yang malas nak guna blender ( I sebab blender baru, kene cuci terus lepas guna dan complicated sikit nak guna, salah suami sebab bli canggih sangat :P )

Resepi Stew Daging :
NI versi saya.. so maybe sesikit berbeza dengan orang lain( I tak kisah) :) big smile..


500 g Daging (lembu or kambing)
2 inchi halia
1 bawang besar
4 ulas bawang putih
2 sudu rempah kari daging
2 sudu garam masala
sedikit lada hitam/putih
garam

Gaul semua bahan diatas dan letak kan atas api sederhana, bila dah sedikit garing dan naik bau, masukkan air, tutup periuk... So dalam masa tunggu air mengelegak kita boleh la potong sayur- sayuran yang nak letak dalam tu nanti.. saya guna;


2batang lobak merah,
3biji kentang,
7kacang buncis,
sedikit bunga kobis,
10 biji tomato ceri,
1 cili besar,
1 bay leaf.

semua potong besar2, dan masukkan yang lambat empuk terlebih dahulu.. sampai habis.. tutup periuk dan masak sampai daging dan sayur empuk lebih kurang sejam.. letak garam dan tutup api.. siap.. sedia dimakan dengan roti atau nasi..

Eggs(fried) Salad



Upload on behalf my super duper busy husband..

Ingredients:

4 eggs, 1 pepper(any colour), mix salads, ground black pepper, salt and vegetable oil.

Methods:
1 Crack the eggs and put in a bowl, seasons with salt and black pepper. Whisk.
2 Heat the pan and put a bit oil ( or NO oil if using non-stick pan).
3 When the pan is hot, gently pour the eggs mixture and fry until it cooked. Quickly rollled and leave it to cool down. Cut.
4 Slice the pepper and make the salad ready.
5 Put the veggies in a big bowl and combine with eggs.. seasons with black pepper and salt.

Focaccia Bread










Dulu masa kat Italy, main cuba2 buat sendiri je.. pastu bila balik UK balik baru tengok internet macam mana nak buat Focaccia ni.. pastu boleh agak la mana silap..hehe tak pe la yang penting ade niat mencuba.. Sebenarnya tak berani nak makan yang kedai punya sebab masa kami baru sampai Italy tu lepas je kami melantak Pizza, bread diorang baru ade yang bagitau (orang tempatan) yang roti2 diorang biasanya letak Lard sebab nak kekalkan resepi tradisional mereka..huhu pastu beli je la gandum ape segala perkakas tu buat sendiri..hehe sabar je la..

Saya sebenarnya pon xde ikut tepat2 resepi2 kat internet tu tapi boleh la buat rujukan.. Video ni paling saya suka sebab cara uli abang hensem ni membuat ku cair..hahhah sabar je la, jangan marah ye bang.. :P.. hehe

Mee Kari




Dulu masa kecik2 bulan puasa tu petang2 selalu tengok rancangan masakan, terutama kalo chef wan yang masak best gilerrr.. pastu berangan bila besar nak jadi macam chef wan..haha tu masa kecik la sekarang xde pon rasa macam tu lagi, yang saya tahu saya sangat seronok memasak dan love eating very much :)!! yes I do..hehe.. ok2 resepi ni pon kira inspired dari resepi chef wan la tapi episod tu masa saya kecik2 dulu tu yang ingat2 lupa la ni tapi buat je hentam je apa masuk dalam kuali tu.. Alhamdulillah masa belum kawin mak ayah adik2 suka sekarang lepas kawin pon suami sangat suka jadi ok la tu yer.. hehe ok laaa.. Ni resepinyer..


Bahan2(untuk masak 2 orang):

Ayam sebelah bahagian dada, 2sudu rempah kari, sedikit minyak untuk menumis, garam secukup rasa, sayur-sayuran( taugeh, lobak merah, sawi), telur(rebus, buang kulit dan belah dua), Tauhu (potong empat dan goreng), bawang goreng, cili potong, limau nipis.. dan mee..dekat sini payah skit nak bli mee kuning ni (egg noodles) ni,so altenatifnya saya guna spaghetti(rebus sampai kembang dan tos)..bawang putih, bawang merah ,halia dan daun kari.. tu je la saya letak.. simple je..

Cara memasaknya pon simple jugak.. mula2 panaskan minyak pastu tumisla bawang putih, bawang merah dan daun kari sampai wangi.. masukkan pes rempah kari tumis sampai naik minyak..
Masuk ayam yang telah dipotong kecik , gaul dan biar sekejap.
Masukkan santan, kacau dan biar mendidih.
Masukkan garam, biar atas api yang kecil sampai masak..
Bolehla hidang, letak mee dalam mangkuk, masuk kuah kari ayam, masuk sayur sawi, tauhu, telur , bawang goreng, limau nipis, lobak serta taugeh.
Bolehla makan.. Kuah kari ayam tu kadang2 saya bubuh kerang kalo ada... okla tu.. janji ikut selera..

Ayam Tandoori



Ni gambar tahun dulu2 ni, dekat 3tahun dah kot..hehe baru ternampak... lagipon selalu buat ayam ni sebab senang tapi asyik lupa nak upload...

bahan2 untuk lebih kurang 2ketul bahagian bawah ayam( chicken leg-pairs)

1biji bawang besar,2 ulas bawang putih, sedikit halia, sesudu kecil serbuk cili, garam , 2sudu besar tandoori masala,yogurt(plain) dan sedikit minyak/butter.

Campurkan kesemua bahan2 dan perapkan bersama ayam sekurang kurangya setengah jam.. Bakar dalam oven dalam suhu lebih kurang 180 celcius -rak tengah... Balikkan ayam sekali sekala.. Bakar sehingga masak.. Enak dimakan bersama nasi atau roti..

Ayam Percik



This is Malaysian-styled barbeque chicken.. I made it very simple but delicious ..


Bahan-bahan Ingredients :

Bahagian bawah ayam dipotong menjadi 2 1 pair chicken leg( cut into 2 pieces)
1 1/2 cawan santan pekat 1 and half cup thick coconut milk
2 ulas bawang putih 2 cloves garlic
1labu bawang besar 1 onion
2 cm halia 2 cm ginger
1 batang serai 2 lemongrass stalks
1 camca ketumbar 1 tbsp coriander seeds
1/2 sudu jintan putih 1/2 tbsp cumin seeds
2sudu tepung beras 2 spoons rice flour
1/3 cup air asam jawa 1/3 cup tamarind juice( 1tbsp tamarind paste mix with the water)
cili kering Dried chilli ( optional if you like hot/spicy)
garam salt
gula sugar


Cara-cara Methods

1 Kisar bawang , halia ,serai, ketumbar dan jintan sehingga lumat dan perapkan dengan ayam lebih kurang setengah jam.
Blend onion,garlic, ginger, lemongrass stalks, cumin seeds and coriander seeds until smooth and marinade chicken with the paste for about half an hour.

2 Dalam kuali besar, campurkan perapan ayam bersama bahan2 yang lain sehingga sebati dan masak diatas api sederhana sehingga ayam separuh masak.
In a large wok combine the rest of the ingredients and cooked with the marinaded chicken until half cooked.

3 Angkat ayam dan bakar didalam oven sehingga masak dan sedikit garing di bahagian atas.
Take out the chicken and put in the preheat oven/grill until the chicken cooked through and a bit browny colour over the chicken.

4 Dalam masa yang sama biarkan kuah diatas api yang kecil sambil dikacau sehingga pekat.
At the same time leave the gravy on the small flames until the gravy becomes thickens.

5 Bila ayam dah masak hidangkan bersama kuah.. sedia untuk dimakan bersama nasi putih atau beriyani.. :)
When the chicken ready , serve with the gravy and ready to eat.. Nice to eat on its own or with rice or Beriyani.



Puteri Mandi

Bahan-bahan; Ingredients

3cawan tepung beras 3cups Gloutinous rice flour
secubit garam a bit of salt
sedikit air about enough water( to make a dough)
pewarna(mengikut kesukaan ) colouring (depents on what you like)
100g kelapa parut 100g grated coconut (or desicated coconut)
5 sudu besar gula 5 spoons sugar( or depents how sweet you want)
air untuk larutkan gula water to disolve the sugar
daun pandan pandan leaf(optional)
3 sudu santan 3 spoons full coconut milk

cara-cara methods

1 Didalam mangkuk besar campurkan tepung beras dengan sedikit garam, masukkan air sedikit demi sedikit dan gaul sehingga tepung menjadi doh..
In a big bowl mix the gloutinous rice flour with salt, put the water and mix until it becomes dough..

2 Bahagikan aduanan kepada empat bahagian dan tambah pewarna kepada setiap aduanan (saya menggunakan pewarna merah, hijau dan pink serta warna doh yang asal)
Devide the dough into four portion and put the colouring to each dough ( I used red, green, pink and original dough)

3 Apabila pewarna dan sebati bentukkan menjadi bulat dan leperkan bahagian tengah.. Buat sehingga doh habis.
When the colour combined, make the dough into small balls and press in the middle. Repeat until all dough finish.

4 Panaskan air dalam periuk sehingga mendidih masukkan doh yang dileperkan tadi, biarkan sehingga terapung dan angkat.
Boil the water in a pot and put the small balls in the boiling water, wait until float, take them out and drain the water.

5 Dalam periuk yang lain, panaskan gula, sedikit air dan daun pandan sehingga mendidih, keluarkan daun pandan dan masukkan kelapa parut dan santan. Didih sehingga cukup likat.
In different pot heat the sugar, water and pandan leaf until boiling, take out the pandan leaf and put the grated coconut and coconut milk stir until it becomes thickens.

6 Bila dan likat, masukkan kesemua puteri mandi tadi dan kacau sebati.. siap.. sedia untuk dimakan.. :)
When the coconut mix thickens (not to dry). Put the cooked balls(puteri mandi) and stir well until it combined.. Done! ready to eat.. :)

Mediterranean Fish Casserole





Serves 6
Preparation time: 25 minutes
Cooking time: 30 minutes

Ingredients

2tbsp olive oil
1 red onion, peeled and sliced
2 garlic cloves, peeled and chopped
2 red pepper
1 whole medium size courgette, cut into small square
1 medium size carrot, peeled and cut into small square
400g/14oz canned chopped tomatoes
1tbsp chopped fresh origano
450g white fish( skinned and boned)
450g prepared squid, cut any shape desired
300ml fish or vegetable stock
155 fresh prawn( clean and shelled)
salt and pepper

To garnish:
2 tbsp chopped fresh parsley


METHOD

1 Heat the oil in frying pan and fry the onion and garlic over a medium heat for 2 3 minutes until beginning to soften.

2 Deseed and thinly slice the peppers and add to the pan.. Add squid and continue to cook over a low heat for a further 5 minutes. Add the tomatoes, prawn and herbs, stock and stir well.

3 Preheat the oven to 200 degree C or gas mark 6. Cut the fish into 3cm pieces and places in the casserole dish.. Pour the fried mixture, stir well and season to taste.

4 Cover and cook in the centre of the preheat oven for about 30minutes, until the fish is tender and cooked..

5 Served in a hot bowls garnished with parsley.. Can be eat with bread or rice..

Sea Bream with Chilli Sauce


Recipe from my mother.. tq mum.. :)

Ingredients:

600g sea bream
vegetable oil
3 red dry chillies
3cloves garlic
1/2 onion
1 fresh tomato/ dry tomato
salt
pepper
1tsp sugar

Step 1; Prepare the fish.

Clean and dry the Bream.. Score the fish skin with sharpe knife.. Heat the oil ( enough to cover the fish) and fry until it cooked . Drain on tray with the kitchen towel.

Step 2; to make a sauce

Take the seeds out from chilli and soaked the chillies in the hot water for a while.. Blend the chilli, garlic, onion and tomato until it becomes smooth puree..
Heat the pan, and put 3 tsp oil and fry the puree until it become fragrance, add a bit salt, pepper and sugar.. If the sauce too dry add a bit of water.. Stir it all together and remove from the heat..

Step 3.. Serve

Place fish onto serving plate and spoon over chilli sauce.. Ready to serve.. :)


Tips: If you dont like it too spicy, reduce the amount of chilli used.


Kek coklat moist



Walaupun rupanya tak mengiurkan tapi rasanya memang sedap.. hehe ni kerja anak2 la.. katanya nak buat kejutan untuk ayah ala2 "welcome home" kek gitu, hrtu ayah pegi Barcelona 6hari.. asal plan diorang nak buat tapi sebab mak malas nak bersih2 lepas buat tu jadi mak buatla kek, anak2 pulak yang hias.. tahu je la kalo 5 dengan 3 tahun yang buat kek... boleh bayangla sepahnyer kan..ok la.. ni resepinya untuk mak teh and mak gie.. sorry la banyak kali dah buat tapi malas nak update... cuba tau.. jangan malas2..

bahan2:

175g tepung naik sendiri*
175g serbuk koko*
1 sudu baking powder*
6 biji telur
300g gula halus
350 g mentega/butter
1 sudu esen vanilla
100g coklat masakan (parut)

bahan yang bertanda * diayak..

Cara-caranya..

Pukul telur, gula dan mentega sehingga kembang... Masukkan esen vanilla dan tepung yang diayak sedikit demi sedikit sehingga habis (sekiranya aduanan menjadi sedikit keras tambah sedikit susu cair/air panas) ... Masukkan coklat masakan yang telah diparut, gaul sebati dan masukkan adunan ke dalam loyang .. Bakar di dalam oven pada suhu 190degreeC dalam lebih kurang 40 minit atau sehingga kek masak... Sejukkan .. Untuk topping, coklat masakan dicairkan dan sapukan atas kek, hias sesuka hati... :)






Rose Roast chicken



1 Whole chicken
1 onion*
3 cloves garlic*
1 inch ginger*
2 tsp paprika
2 tsp chilli powder
1 tsp ground coriander seed
1 ground cinnamon
1 ground black pepper
1/2 tsp ground cloves
1 tsp green cardamon
2 tsp sesame oil
50 g butter/ fat
salt
sugar

*blend together

Method;

1 Clean the chicken and remove all the fat.

2 In a bowl mix together all the ingredients and rub all over (inside and outside) the chicken. If you have a time cover and marinate for 2 hours..

3 Preheat the oven 170 degreeC. Places the chicken in a large roasting pan and cover with foil.

4 Roast for about 40mins.. Remove the foil and roast again until the skin golden and crispy about 30mins or longer if the chicken is big.. Need check to make sure the chicken is cooked through..

5 Allow chicken to rest for ten minutes before carving..

6 Serve the roast spiced chicken with gravy..



Daging masak kunyit


Bahan-bahan;

Daging 1/2 kg
1biji bawang besar
2ulas bawang putih
1/2 inchi halia
3sudu besar sebuk kunyit
1/2sudu lada sulah/hitam
3biji kentang
sebiji lobak merah
cili
garam
minyak

Cara-caranya;

1 Daging dihiris nipis.
2 Kisar bawang besar dan bawang putih serta halia.
3 Panaskan minyak, tumiskan bawang sehingga naik bau, masukkan lada sulah atau lada hitam.
4 Bila tumisan dah agak kekuningan masukkan daging, masak sampai empuk.
5 Masukkan kentang, bila dah empuk, masuk lobak merah dan cili..
6 Bila dah masak semuanya masukkan garam..Tutup api, siap.. boleh dimakan dengan nasi :)

Asam Pedas Ikan Merah

My easy peasy asam pedas... jarang buat sejak kat UK ni tapi boleh la buat ubat rindu kampung halaman..


Bahan-bahan:

sepotong Ikan Merah
segengam daun kesom
sedikit garam
2 cili kering/hidup
bwang besar 1/2 labu
bawang putih 3 ulas
kunyit 1/2 cm
asam keping ( atau air asam jawa)
air
3 sudu minyak masak
fish cube (optional )

Cara-cara:

Tumbuk/kisar bawang besar, bawang putih, cili, dan kunyit. Tumiskan bahan2 yang dikisar dengan minyak sehingga naik bau.. masukkan air/air asam jawa, fish cube dan asam keping. Bila dah mendidih masukkan ikan, garam dan daun kesum.. Biarkan sehingga masak.. Hidang..



Sticky Chicken Wings


The plate a bit messy because my son start eating it while I'm taking the picture.. :)


Ingredients:
1 kg chicken wings
3/4 cup honey
3tsp soy sauce
1tsp curry powder
salt
ground black papper
sesame seeds( optional)

Mix all the ingredients except the sesame seeds. Coated the chicken wings and put in the oven on 200 degree C for about 20 minutes or until it golden brown... Put the sesame seeds (optional) and served ..

Fish in Soy Sauce



OMG the veggies cover my fish! :P

Ingridients;
Fish (fillet- any fish as like)
Mayonnaise
salt
balck paper

For the Sauce :

2 tsp soy sauce
2 tsp sesame oil
onion
1clove garlic
1 inch ginger (peeled and cut into strips)
carrot ( peeled and cut into strips)
4tsp water
salt
Spring onion( cut into strips)
Pepper( any colour )

Method;

Put the moyonnise , salt and balck paper on top of fish and then baked for about 10 minutes in the 150degree C or until it golden..



In the wok, heat the oil, stir fry the onion, garlic and ginger until fragrant.
Put the pepper, spring onion, , water and soy sauce... fry for about 2minutes and pour on the fish. Serve immediately with rice.

Garlic Herbs Bread





This bread give a delicious aroma and I just love the taste.. Can be used for pizza dough or serve with Lasagna or any way you like.. Honestly I dont know the original recipe but I just try it at home.. so this is the best result I got so far.. :)


Ingredients:

300 gram white bread mix
300 gram self raising flour
herbs (origano, parsley, basil)
Butter
Crushed garlic
salt
warm water
2 spoon Olive oil

Preparations:
1 Place bread mix, self raising flour, olive oil and a pinch of salt in the large bowl, add 400ml water( need more or less).
2 Mix for about 5 minutes. Lets dough rest for about 5 minutes and then knead for another 10 minutes on a lightly floured board..
3 Cover with a damp cloth or clingfilm for a few hour -leave to rise in a warm place..
4 When about double size, knead again about 2 minutes and place on a greased baking tray or bread tin..
5 Pinch the dough with fingers or use fork, put the butter, crushed garlic, olive oil (again!), and herbs and pinch again until the butter and garlic about combined with the dough..


6 Bake in a pre heated 170 degree C oven for about 40-50 minutes.
7 Take it out and leave cool down for about 10 minutes and serve warm.. mm tasty!

Hainan Chicken Rice

Nasi Ayam Hainan...Chicken broth is missing in this picture...

Sorry la erk adik2 ku sayang lupa nak letak sup&nasi masa ambik gambar ni... huhu.. xpe bila buat sendiri nanti mesti puas hati air tangan sendiri.. cuba k!

Untuk Ayam:
1 ayam yg telah siap dibersihkan
1 inci halia diketuk
2 ulas bawang putih diketuk
garam

Masukkan halia, bawang putih, dan garam dalam perut ayam, letakkan ayam dalam periuk besar dan isikan air sehingga menutupi ayam. Biar dalam api sederhana sampai ayam masak lebih kurang 30-40 minit bergantung kepada saiz ayam.. Bila ayam dah masak keluarkan ayam dan letakkan dalam bekas yang berisi ais ( untuk mencantikkan kulit ayam) ,toskan dan perapkan ayam dengan minyak bijan.. Bila nak hidang nanti masukkan ayam dalam oven seketika untuk mendapatkan warna kulit yang cantik dan sedikit kekuningan( ni tak nak tak pe) :) simpan air rebusan untuk masak sup dan nasi..


Untuk nasi:

4 cawan beras, sedikit minyak dan margerin/butter, bawang putih,halia kulit kayu manis(dan rempah ratus lain jika suka) sikit je la..


Bersihkan beras. Panaskan minyak dan margerin dalam kuali, masukkan bawang putih yang dihiris halus, rempah ratus,kulit kayu manis, dan halia yang dimayam halus. Tumis sehingga naik bau.. Kemudian masukkan bahan yang ditumis kedalam periuk beras yang telah dibersihkan tadi..masukkan air rebusan ayam tadi secukupnya untuk masak nasi sampai masak..


Untuk Sup:

Air rebusan ayam, 1paket sup bunjut,3ulas bawang merah(kisar) , halia dan 1bawang putih (kisar) ,garam, daun sup, kentang dan lobak merah atau kubis etc (jika nak letak), bahan perisa/kiub pati ayam jika suka..

Tumiskan bawang putih, bawang merah, halia,dan sup bunjut sampai naik bau, masukkan air lebihan rebusan, garam dan bahan perisa dan kentang.. bila agak2 kentang dah agak lembut, masukla kubis atau lobak merah kalo nak letak. Biarkan lembut baru tutup api. Bila nak makan hidangkan bersama hirisan daun sup.


Untuk sos cili:

4ulas bawang putih, 1biji tomato, 5 cili besar, air perahan limau nipis ( boleh tukar dengan cuka kalo suka), gula dan garam secukup rasa..

Bahan diatas diblender.


Untuk sampingan/ulaman:

1 batang timun, 2biji tomato, salad (dihiris), bawang goreng ( ditabur ats nasi dan sup), minyak bijan/bijan (ditabur atas ayam selepas dipotong~ni untuk mencantikkan saje, tidak menganggu rasa.. )


P/s: sorry la erk.. lama dah tak susun ayat dalam bahasa melayu.. serabut beno rasa ni, hari tu siap ade yang ketawa lagi, "aik gentel??? bukan bulatkan ker..weird la".

Sweet potato balls





Ingredients:

2 large Sweet potatoes(boiled)
600 grams self raising flour ( you might need more)
1 tbsb salt
2 eggs
Icing sugar


Directions:
Mash the potatoes in a large bowl, put salt, eggs, and flour and mix together until make a nice soft dough ( dough not sticking in your hand),if the dough are still sticky put more flour.. rolled the dough into a small balls and then deep fry them until nice and golden colour.. When it cold down a bit coated with the icing sugar.. Ready to eat..


TIPS: You can coat the balls with sesame seeds before fry them.. Also can use a normal potatoes insteed sweet potatoes.. :)

Veggie Curry Puff






All time favourite dish from Malaysia... and for the first time I bring it to share with my friends when we having picnic.. I made vegetarian style as my friends are mostly vegetarians.. Original recipe is made from minced beef or chicken with small diced potatoes. Honest, believe it or not when in Malaysia nobody bother to make their own curry puff at home because easly can find it in supermarkets (frozen)or at street foods stall. The only problem is takes a little patience with the dough. I'd usually made about enough to eat at the time, but last time(yesterday) I make a giant one as I'm a bit tired with the rolling pin.. :P.. Ok so here the recipe, I make 2 different style, deep fry and baked.


Make the filling first:

4medium sizes potatoes, small diced
1 medium size carrot (diced)
1cup green peas
3spoonful Curry powder
2spoonful vegetable oil
1 small size onions (diced)
water half cup
salt

Heat the oil in a pan, fry the onions till fragrant. Add the curry powder and stir well. Put the potatoes, stir and put water, cook until the potatoes just about to soft and add the carrot, peas and salt. Cook for about 5mins till it dry and cooked. Leave aside to cool.

Pastry:

500gram flour,
2spoonful butter( margerin)
2spoonful vegetable oil
warm salted water

Heat the butter and oil just about the butter melted and then mix with the flour until combined together. Then pour the warm salted water (bit by bit) at the same time knead until you got a nice soft dough..Divide into small ball (a portions about 150grams each).



To fill and shape puff:

Roll the small ball (dough) into a circle with a rolling pin.
Put 1tbsb of filling in the centre.
Press the edge together and seal it. This will give you a half moon shape. I have a special cutter for this, so I can get the even shape.
Pinch the edge of the puff with your thump. Bring it the back side foward and seal it the front. Repeat the process until all done.

Style 1- deep fry

Heat the oil in the wok or deep fryer. Oil must be very hot before putting in the puff. Oil must enough cover the puff.
Fry it on medium heat until golden brown.





Style 2 - baked

Place the baking paper on the baking tray
Easyly put the ready puff and brush it with the egg yolk
Bake until it golden brown..

Ready to eat.. enjoy!



herbs roasted potatoes





Ingredients:

10 medium sizes King Edward potatoes
3 spoonfull vegetable fat
herbs( thyme, parsley, rosemary, origano)
3 garlic gloves
salt


Preparation method

1 Peel and cut the potatoes into half or any size as you wish, boil into salted water almost tender..
2 Drained the water and put the vegetable fat, garlic (crushed) and herbs. Put the lid on and shake the pot until all combined ( well coated with fat and herbs)..
3 Put on the baking tray and pop in the oven until it golden brown, turn it and continue until all brown..
4 Served.

Kueh Koci..


Assalamualaikum...

Walaupun bermacam-macam halangan untuk buat kueh ni tapi akhirnya Alhamdulillah dapat jugak rasa hasil air tangan sendiri.. hehe apa2 pon terima kasih kepada K Kam sebab sudi berkongsi resepi dan tips...


Resepi: Untuk doh~ 2cawan tepung pulut, 1 cawan tepung gandum, sedikit garam dan 2cawan air( boleh tambah atau kurang ikut keperluan ).
Untuk Inti : Gula merah, gula, garam dan sedikit air serta kelapa parut ( desicated coconut ), dan sedikit santan pekat serta daun pandan..

Untuk buat inti : Panaskan sedikit air dalam periuk sampai mendidih, masukkan gula merah. Bila dah agak menggelegak dan gula merah larut dengan air masukkan kelapa parut bila dah agak sebati masukkan santan ,garam dan pandan. Masak sampai pekat, cukup2 lembap je la macam tu.

Cara: Mula2 campurkan bahan doh sampai jadi seperti ini


kemudian bulat-bulatkan untuk senang proses membungkus nanti..


kemudian leperken, masukkan inti dan balut didalam daun pisang, sebelum tu sediakan daun pisang dengan bentuk heksagon untuk senang bungkus (bg yang dah advance tak payah la kot..hehe)


Bila dah saip banyak skit atau penuh satu periuk pengukus, kukusla lebih kurang sepuluh minit, bergantung pada saiz..

Bila dah masak bolehla makan.. :)

Sambal Tahun






Ini baru percubaan kedua buat Sambal Tahun ni, almaklum ler saya ni orang pantai timur bukan orang Jawo..hehe ini pon bila datang UK ni baru tahu ape itu Sambal Tahun.. Ceritanya begini, resepi ni sekali pandang je dari blog seorang teman pastu terasa teringat pulak lepas tu so cuba la.. not bad tapi versi saya ni kurang pedas la sebab perut saya sensitif kepada makanan pedas.. Ok, inila resepi setelah ditokok tambah.

Bahan-bahan : Sotong, isi kerang/kupang , bawang besar sebiji, bawang putih 3 ulas, lengkuas dihiris nipis (susah bebeno nak cari lengkuas kat Birmingham ni ) ,sedikit bilis atau udang kering, cili padi (ikut suka ), santan 1 tin ( satu biji kelapa) ,garam , gula.. saya sengaja gi bubuh serai sebab rasa nak letak.. :P...ade orang letak air asam jawa tapi saya tak letak.. :)

Cara2nyer pulak :

Kisar bawang besar dan bawang putih,udang kering/ bilis sampai lumat.
Tumis bahan yang dikisar tu sampai naik bau, masuk serai, lengkuas, cili padi, biar seketika pastu masukla santan... Bila dah agak mengelegak skit masuk la sotong dan isi kerang(air asam jawa kalo nak letak ).. Masakla sampai pekat.. Masuk garam dan gula .. gaul sebati sampai masak... Hidang , boleh makan dengan nasi.. bila isi dah makin berkurang boleh tambah lagi masak lagi..etc sampai seterusnya... Udang/sotong boleh diganti dengan perut.. Masakan ni lebih sedap kalo sentiasa diperhangat dan makin lama makin sedap rasanya orang kata tapi saya selalu buat sekali makan je.. :)

Spaghetti meatball ala Asia




Boleh ke saya bagi nama tu??? haha suka hati la erk yang penting boleh masuk tekak kita..
Resepi ni sebenarnya keluar idea macam tu je tetiba dan terus buat dan sangat kebetulan masa tu dah perap daging cincang dengan garam, parsley dan origano serta sedikit rempah tikka masalla malam sebelum tido ( letak dalam peti sejuk).

Bahan2 yang diperlukan ialah;
3ulas bawang putih, setengah labu bawang besar, 2sudu besar tomato puree, setengah sudu Red Thai Curry paste, setengah cawan stok ayam.. Untuk meatball nyer pulak kita perlu perap daging cincang dengan garam, parsley dan origano serta sedikit rempah tikka masalla. Sedikit minyak zaitun dan sedikit garam. Tidak lupa spaghetti lebih kurang 250gram.

Cara2nyer pulak macam ni :
Spaghetti direbus, daging cincang (sy guna mince lamb) diperap dengan daun parsley, origano, rempah tikka masalla dan sedikit garam.
Seterusnya, gentel daging yang diperap tadi kemudian goreng sampai masak dengan minyak zaitun, angkat. Tumis ( guna minyak tadi)bawang besar(cincang) dan bawang putih(cincang) sampai naik bau. Kemudian masuk tomato puree, Red Thai Curry paste dan masukkan daging yang digoreng tadi.. gaul sampai sebati agak dah pekat sikit masukla stok ayam, bila dh mengelegak masuk spaghetti yang direbus tadi.. letak garam sikit bila dah agak2 cantik tak terlalu berair dan tak terlalu kering tutupla api.. Hidang masa panas.. :)



Chocolate Nest





Got inspiration from my 3years old son stay and play.. Last day for Spring term they've made something for Easter, many thing but the most interesting for me and my son seriously is Chocolate Nest... They made a different style but at home we made our own version.. easy and yummy and the most importand thing is good for kids to join too... :) Like my son said "Its easy peasy mummy, can we do it again next time? :)."

Here for the recipe :



We only need cooking chocolate or you can use chocolate buttons, wholegrain wheat, muffin case and chocolate eggs..
First cruch the wholegrain wheat, melt the cooking chocolate or chocolate buttons, and then mix them together until they combined and put in the case and last put the chocolate eggs.. :) Finish!

Choc chip, nuts and seeds cake


Hari tu sebelum pegi bercuti , sempat jugak dalam kelam kabut pagi tu saya buat kek, dah lama sebenarnya rasa nak makan kek yang macam ni hasil air tangan sendiri tapi keadaan je yang selalu tak mengizinkan, apa-apa pun Alhamdulillah dapat jugak buat ..

Resepi ni sebenarnya ilham dari kotak butter brand yang kegemaran saya.... namanya Stork (perfect for cakes) :)... Tapi macam biasa la saya ni jenis yang tak berdisiplin bab-bab bakar membakar masak memasak ni..hehe ade je yang akan ditambah dan tolak.. tapi setiap kali mesti menjadi ye la..hehe hebat ke kebetulan??? Takpe la apa2 pon asal bahagia tu yang selalu saya kata :).... okla tak nak membebel panjang resepi tu lis macam ni...

For the best Birthday Cake:

In a big bowl, first sieve together 175g self raising flour ( tapi macam sy cakap tadi saya buat ikut sukatan sendiri saya cuah je self raising flour tu dalam bowl tu , dalam 500g gitu haha..) and jangan lupa baking powder.. ( ni saya tak letak.. sebab payah nak ambik masa tu sebab dok top self, tuan pon tak berapa panjang nak ambik huhu )
Ok Next, add 3 eggs ( saya bubuh 5 large eggs), 175g caster sugar ( saya main tuang je, so anggaranya 300g-sengaja dikurangkan sebab saya tak suka manis ), 175g stork (butter, boleh je nak guna brand ape2 pon janji halal yer ) and 1/2tsp vanilla extract ( saya letak satu tudung tu, tak tahula kalo ikut kira sudu... ok next (ni tak de tulis kat situ saje nak tambah ) saya letak la nuts and seeds byk jenis jugak la termasuk raisin pon saya boh sekali...
Now tiba la bab melekit ni, whisk butter and sugar sampai sebati skit pastu campu la telur satu persatu sampai telur habis, sampai silky smooth and then masuk la tepung yang diayak tadi sikit demi sikit , masuk chocolate chip, bila dah siap semua masuk la dalam tin(dulang pembakar) jangan lupa sebelum tu sapu dulang tu dengan mentega atau letak je baking paper untuk bagi tidak melekat.. tin tu di hentak2 skit supaya kak bawah tu seme rata, letak badam sesame seeds and bijan kat atas.

Bake at 170 darjah c (150 darjah c fan assisted)for about 40 minutes while you have a cup tea. Lastly allow to cool in wire rack and kalo nak buat untuk birthday jgn lupa decorate the top in the best birthday way.. Selamat mencuba.. :)


P/s: Sedap tau masa tu kami makan tepi pantai kat Wales.. Makan tak ingat diet you.. hehe :)

Rendang oh rendang

Ingredients:

1 1/2 pound boneless beef (cut into cubes)
5 tablespoons cooking oil
1 cinnamon stick (about 2-inch long)
3 cloves
3 star anise
3 cardamom pods
1 lemongrass (ketuk2 sikit)
1 cup thick coconut milk
1 cup water
2 teaspoons tamarind pulp (soaked in some warm water for the juice and discard the seeds )
6 kaffir lime leaves (very finely sliced)
6 tablespoons kerisik (toasted coconut)
1 tablespoon sugar/palm sugar or to taste
Salt to taste

Spice Paste:

5 shallots
1 inch galangal
3 lemongrass (white part only)
5 cloves garlic
1 inch ginger
10-12 dried chilies (soaked in warm water and seeded)

Methods:

  1. Chop the spice paste ingredients and then blend it in a food processor until fine.
  2. Heat the oil in a stew pot, add the spice paste, cinnamon, cloves, star anise, and cardamom and stir-fry them until aromatic.
  3. Add the beef and the pounded lemongrass and stir for 1 minute.
  4. Add the coconut milk, tamarind juice, water, and simmer on medium heat, stirring frequently until the meat is almost cooked.
  5. Add the kaffir lime leaves, kerisik (toasted coconut), sugar/palm sugar, stirring to blend well with the meat.
  6. Lower the heat to low, cover the lid, and simmer for 1 - 1 1/2 hours or until the meat is really tender and the gravy has dried up.
  7. Add salt to taste. If not sweet enough, add more sugar to taste.
  8. Serve with rice and kalo nak save some for overnight pun boleh..

P/s; resepi ni diambil kat internet tapi diolah mengikut citarasa sendiri..dan kadang kalo tak cukup bahan pun boleh jalan jugak yang penting bahan asas mesti ade!!...

Another Keish version :)






The correct spelling is Quiche from French... Got this recipe from Mrs Johnston (at BBQ party in her house).... not very detail but it makes me curious, so internet is my source....Tapi macam biasa la.. ubah ikut cara dan citarasa tersendiri...

Resepi:
Untuk kulit atau pie dough (crust); We need flour, soft butter, a little bit of salt and cold water. All mix together until really soft, put in the plastic bag or freezer bag and put in the fridge for about 4 hours.

Untuk inti; 5 eggs, salt, ground black paper, dry oregano, fresh basil/parsley, chop onions & garlic. Also, cheese: use any type of cheese you like and any veg you like. Combine together, be careful, don't over beat the eggs!!

Preheat oven to 350°F. Unroll crust and place in pie plate; pierce crust with fork. Put the filling, bake in the oven for about 35minutes. After cooked, cool ~5 minutes on wire rack. Cut into wedges, serve...

Dendeng daging..


Masakan ni rumit sikit nak buat,perlukan kesabaran dan masa... oleh kerana rasa nak makan sesangat terpaksala buat he he.. kalo kat Malaysia ni payah rasanya nak buat sebab boleh beli.. ..walaupun tak arif atau mungkin tak sesedap chef2 yang ada tapi bolehla makan anak beranak.. Ni resepinya(resepi saya ambik kat internet tapi di olah mengikut selera sendiri..) dan tak sukat2 pun main masuk je dalam kuali tu!!


bahan2;


daging,halia,kicap,garam,bunga cengkih,gula,minyak,bawang merah,
bawang putih,cili kering

cara2nya plak;

step 1=Rebus daging dengan halia yang dimayam halus sampai lembut,toskan dan simpan air rebusan,daging dihiris nipis dan diketuk sampai lembut,perapkan daging dengan kicap lebih kurang sejam,kemudian goreng dengan minyak sampai garing.
step 2=Tumiskan bawang merah,bawang putih serta cili kering yang di kisar dan bunga cengkih sampai pecah minyak,masukkan gula, garam dan daging serta air rebusan tadi,masakla sampai pekat...last,hidang.

Shortcakes with Lemon whipping cream




ni resepinya: (untuk buat lebih kurang 30 biscuit.)
1 biji telur, 150g softened butter, 100g caster sugar, 300g plain flour.
dan caranya plak..
panaskan oven 150 or gas mark 2, pukul butter dan gula sampai kembang, masukkan telur, pukul lagi sampai aduan sebati, masukkan tepung dan gaul/uli dengan tangan. Buat bentuk ikut kesukaan dan bakar!!
and last but not least pukul fresh double cream sampai kembang, perahkan lemon dan masukkan gula castor bagi yang suka manis.. Pukul lagi sampai sebati...dan buatla sama ada buat inti kemudian diapit dengan biskut atau makan begitu saja..

Buns..





just uploads...lama tak buat tiba2 hari ni rasa nak buat...ni la dia...dan terima kasih kepada dua pembantu ynag cukup rajin... A&A..

Automatic bread maker or by hand and just need :
Wholemeal(or white) bread flour mix, butter, sugar and water.., for bread machines: Use on the setting recomended by your bread maker manufacturer.. :)
For hand baking: Place bread mix, butter, sugar and water in a large bowl. Mix for 5 minutes. Lets dought rest for 5minutes then knead for another 5minuteson the lightly floured board. Shape as desired and places on a greased baking tray or bread tin. Cover with damp cloth or cling film and leave to rise in a warm place for 30 minutes and then reknead(for wholemeal) for about 5 minutes and leave to rise until double size. Bake at 230degreeC/450F/gas mark 8 for about 30 minutes or until golden brown.. Remove from tray or tin and leave to cool on a wire rack.
