Mediterranean Fish Casserole





Serves 6
Preparation time: 25 minutes
Cooking time: 30 minutes

Ingredients

2tbsp olive oil
1 red onion, peeled and sliced
2 garlic cloves, peeled and chopped
2 red pepper
1 whole medium size courgette, cut into small square
1 medium size carrot, peeled and cut into small square
400g/14oz canned chopped tomatoes
1tbsp chopped fresh origano
450g white fish( skinned and boned)
450g prepared squid, cut any shape desired
300ml fish or vegetable stock
155 fresh prawn( clean and shelled)
salt and pepper

To garnish:
2 tbsp chopped fresh parsley


METHOD

1 Heat the oil in frying pan and fry the onion and garlic over a medium heat for 2 3 minutes until beginning to soften.

2 Deseed and thinly slice the peppers and add to the pan.. Add squid and continue to cook over a low heat for a further 5 minutes. Add the tomatoes, prawn and herbs, stock and stir well.

3 Preheat the oven to 200 degree C or gas mark 6. Cut the fish into 3cm pieces and places in the casserole dish.. Pour the fried mixture, stir well and season to taste.

4 Cover and cook in the centre of the preheat oven for about 30minutes, until the fish is tender and cooked..

5 Served in a hot bowls garnished with parsley.. Can be eat with bread or rice..



P/s:: huh! I know lamanya xupdate blog, busy sgt lps balik Germay tu sehari sebelum Ramadhan. NOW 11 Ramadhan, Alhamdulillah Allah memberi peluang dan kesihatan yang baik untuk menunaikan ibadah dibulan yg mulia ni.. sebenarnya tiap2 hari ambik gambar masakan tapi xde kesempatan lagi nak update lagi sebab fikiran terganngu dengan riots sana sini tu.. semoga Allah melindungi kami sekeluarga..
