Rose Roast chicken



1 Whole chicken
1 onion*
3 cloves garlic*
1 inch ginger*
2 tsp paprika
2 tsp chilli powder
1 tsp ground coriander seed
1 ground cinnamon
1 ground black pepper
1/2 tsp ground cloves
1 tsp green cardamon
2 tsp sesame oil
50 g butter/ fat
salt
sugar

*blend together

Method;

1 Clean the chicken and remove all the fat.

2 In a bowl mix together all the ingredients and rub all over (inside and outside) the chicken. If you have a time cover and marinate for 2 hours..

3 Preheat the oven 170 degreeC. Places the chicken in a large roasting pan and cover with foil.

4 Roast for about 40mins.. Remove the foil and roast again until the skin golden and crispy about 30mins or longer if the chicken is big.. Need check to make sure the chicken is cooked through..

5 Allow chicken to rest for ten minutes before carving..

6 Serve the roast spiced chicken with gravy..
